Biscoff Lingonberry Cake

The sweet, caramel flavor of Biscoff wonderfully complements the fresh tartness of lingonberries. This cake offers a delicious taste experience that is perfect for all kinds of occasions.

Ingredients

  • 200 g butter
  • 2 dl Biscoff spread
  • 2.5 dl brown sugar
  • 3 eggs
  • 1.5 dl plain yogurt or quark
  • 4 dl all-purpose flour
  • 2 tsp baking powder
  • 1 tsp cardamom
  • 2 dl lingonberries

Instructions

  1. Grease a cake pan and preheat the oven to 185°C.
  2. Melt the butter and add the Biscoff spread to the hot butter. Mix until smooth.
  3. Add the sugar, yogurt, and eggs one at a time to the slightly cooled mixture. Mix well.
  4. Combine the dry ingredients and add them to the mixture.
  5. Finally, add the lingonberries and mix until even.
  6. Spoon the batter evenly into the cake pan and bake until done.
  7. Decorate the cake with drizzled Biscoff spread and lingonberries.
