Strawberry juice

This traditional strawberry juice will remind you of summer at grandma’s – and is an excellent match for pancakes!

Ingredients

3 l (1.8 kg/4 lb) strawberries

1 l of water

1.5 tsp. citric acid

sugar

Instructions

Mash the strawberries into a purée. Boil the water and let cool. Dissolve the citric acid in a small amount of water. Pour the cooled water and citric acid over the strawberry purée and let it juice in a cool place for twenty-four hours.

Sieve the mixture and add sugar to taste. If the juice is too strong, you can dilute it using water or mineral water.
