Sand cake

This dreamy-soft and fluffy sand cake is best paired with sweet jam. The trick is to use boiling-hot butter.


2 coffee cups of sugar
4 eggs
3 coffee cups of potato flour
1tsp. baking powder
1 coffee cup of boiling, melted butter
½ dl (5 cl) vodka


Whisk the eggs and sugar until fluffy. Sift in the potato flour and baking powder, then add the boiling-hot melted butter and vodka. Bake at approximately 170 degrees Celsius for around 50 minutes, depending on your oven, until the cake comes away from the edges of the pan. Serve with sweet berry jam.
