Pot Bread

A delicious, crunchy pot bread is easy to make without kneading or grease. The bread acquires a crunchy crust while baking in a hot pot, and since the dough is let to rise for several hours, it is particularly soft and tasty.

Ingredients

700ml white flour
1 tsp salt
4g fresh yeast or 1/2 tsp of dry yeast
3.5 dl water

Instructions

Mix the lukewarm water (with dry yeast the temperature should be approx 42°C) with the other ingredients. Cover the dough carefully and allow to rise for 12–24 hours.
Turn the dough out on a floured surface and fold, do not knead. Sprinkle some flour on the dough and cover with a cotton towel. Place an empty pot in a cold oven and heat to 225°C degrees. When the dough has risen for approx 30 minutes, take the pot from the oven and grease it lightly with rapeseed oil.
Lift the dough into the heated pot and cover with a lid. Bake for approx 30 minutes. Take the lid off and bake for another 15 minutes, or until the surface has a nice brown colour. Turn the bread out and let it cool before serving.
