Buns
2 dl whole milk
1 dl orange juice
25 g fresh yeast
1 egg
1 dl sugar
1 tsp of salt
1 tsp cardamom
1 dl almond flour
75 g butter
1 egg and almond flakes for buttering
Filling
250 g mascarpone cream cheese
grated peel of two oranges
2 dl whipped cream
1 dl powdered sugar
Prepare the bun dough by mixing fresh yeast with milk and orange juice. Add the egg and dry ingredients. Knead the dough, preferably for 5 minutes. Add the butter and knead until smooth. Leave the dough to rise under a cloth for 30 minutes. Divide the dough into 10 parts and bake into round buns on a baking tray. Let rise under a cloth for 45 minutes. Brush the buns with egg and sprinkle with almond flakes. Bake the buns in a 170°C oven for 15-20 minutes. Allow to cool. Prepare the filling by whisking the mascarpone, grated orange zest and powdered sugar in a bowl. In another bowl, whip the whipped cream and fold into the cream cheese. Cut the buns in half and fill with the cream cheese and whipped cream mousse.
