Salad with figs, kale and caramelized hazelnuts

This main course salad combines sweet figs, tender kale and honey-caramelized hazelnuts. In Teresa Välimäki’s menu, even a salad takes on a festive role.

Ingredients

6 servings

Caramelized hazelnuts:

  • 50 g hazelnuts
  • 1 tsp olive oil
  • 1 tbsp honey
  • Pinch of salt

Dressing:

  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Pinches of salt, pepper, sugar

Salad:

  • 150 g kale
  • 6 figs
  • 1 tbsp butter
  • 1 head crisp lettuce

Instructions

Toast hazelnuts in a pan until fragrant. Add olive oil, honey, salt, stir quickly, spread on parchment to cool. Mix dressing in large bowl. Remove thick stems from kale, slice leaves, massage with dressing until tender. Cut figs into wedges, quickly sear cut sides in butter. Tear lettuce into bite-size pieces, mix with kale. Arrange salad on platter, top with figs and crushed hazelnuts.
