2 tbsp olive oil
1 tbsp lemon juice
100ml fresh herbs (basil, flat leaf parsley or rocket)
170g olives
150g feta cheese
1.3kg mini watermelon
Mix the oil, lemon juice and herbs. Slice the olives and crumble the feta cheese. Cut the watermelon into two-centimetre-thick slices and sprinkle the toppings evenly on them. Drizzle on some more olive oil and balsamic vinegar, season with black pepper.
