5 egg whites, room temperature
255 g caster sugar
1 tsp potato starch
½ tsp baking powder
For drizzling:
Melted chocolate
Beat the egg whites until soft peaks form. In a separate bowl, mix together the dry ingredients, then in gradual additions fold into the egg whites. Using two spoons, drop large dollops of the mixture onto a baking sheet lined with parchment paper. Bake the meringues in a 140 °C oven for about 1 to 1.5 hours. After baking, let the meringues cool and then dry for a few hours or overnight. Drizzle over the melted chocolate.
