Apple and Smoked Ham Pie with Mustard

The combination of mustard, apple and ham gives this warm and filling savoury pie a new twist. This pie will melt in your mouth; you will be singing its praises for a long time!

Ingredients

Crust:
150g room temperature butter
300ml white flour
0.5 tsp salt
1 egg

Filling:
2 large onions
2 cloves of garlic
butter
300g smoked ham
3 tbsp coarse Dijon mustard
200 g crème fraîche
100ml cream
4 egg yolks
150g grated Emmental cheese
2 tsp salt
ground black pepper
2–3 sour apples

 

Instructions

Mix the soft butter and flour together. Add the salt and egg. Roll the dough evenly and press into the roasting tin. Bake in the middle of the oven at 200°C for approx 10 minutes.

Slice the onions. Crush the garlic. Melt a good knob of butter in a frying pan and sauté the onions by stirring them until they are brown and cooked. Take the frying pan off the stove.

Slice the smoked ham and add to the onions. Add the crème fraîche, cream, mustard, egg yolks, grated cheese, some salt and pepper and stir. Allow the filling to cool for a moment, and then spread it onto the pre-baked pie crust.

Peel the apples and remove the cores. Use an apple peeling machine to cut the apples into thin spirals. Press pieces of the spirals on top of the filling.

Bake the pie at 200 °C for 20–30 minutes, until the filling has set and the surface has turned nice and brown. Allow to cool and settle for a moment before serving.
