1pkt Jalotofu Asia 300g (or Cold Smoked/Marinated)
½-1 tbsp oil for frying
1 pcs carrot
2 pcs onions
1 pcs celery stalk
1.5 tbsp oil 1 tablespoon of garlic
3 cloves of garlic 3 cloves of garlic
1 tbsp grated ginger
1 pkt cooked red lentils 380 g
5 dl vegetable stock (water + bouillon cube)
1 tsp tomato puree or cherry tomatoes in juice 400 g
1 (blood) orange
1 cinnamon stick
1 tsp curry
½ tsp smoked paprika
½ tsp cheese cumin
1 tbsp creme fraiche or sour cream 150-200g (Ve)
1 dl good quality olive oil
½ tsp whole cumin seeds (optional)
½ tsp of whole coriander seeds (optional)
1 bunch of parsley
1 chilli without seeds
1 clove of garlic
½ tsp salt
Bring the vegetable stock to the boil.
Prepare the parsley oil: finely chop the parsley, garlic and chilli. Lightly crush the cumin and coriander seeds in a mortar and pestle. Mix the oil and all the ingredients in a bowl and set aside.
Chop the celery stalk, carrot and onions into small cubes. Grate the ginger and garlic. Put 1.5 tablespoons of oil in the bottom of a cast iron casserole / saucepan and add all the vegetables. Sauté for a moment. Add spices and vegetable stock. Simmer for about 10 minutes, until the vegetables are cooked. Squeeze 1 dl orange juice and drain the lentils. Add the orange juice, lentils, 1/2 tbsp creme fraiche and a can of cherry tomatoes or crushed tomatoes to the casserole. Stir and bring to a simmer over low heat.
Open the package of Jalotofu Asia package and drain off the excess marinade from the package.
Dice the tofu and place in a pan. Fry in a dry hot pan for 2-3 minutes, turning occasionally.
Reduce heat to half and add oil. Fry for 2-3 minutes, turning occasionally.Take off the heat and add the marinade. The marinade will boil quickly in the hot pan and “finish” the tofu.
Add the tofu to the stew and serve with a dollop of creme fraiche and parsley oil.
