Orange-jalapeño skagen in crustade shells

This festive starter combines classic shrimp Skagen with the freshness of orange and the gentle heat of jalapeño. Teresa Välimäki gives the Scandinavian favorite a modern twist.

Ingredients

  • 300 g shrimp
  • 2 tbsp crème fraîche
  • 1 tbsp mayonnaise
  • 1 dl chopped dill
  • 2 tsp grated orange zest
  • 1 green jalapeño, finely chopped
  • 1 tbsp orange juice
  • Pinches of salt and black pepper
  • 18 small crustade shells

Instructions

Drain shrimp well. Chop lightly with a knife and place in a bowl. Add crème fraîche, mayonnaise, dill, orange zest, jalapeño, and orange juice. Mix and season with salt and pepper. Let rest 10–15 minutes. Fill crustade shells with the mixture and arrange on a platter. Garnish with dill if desired.
