For 4 people, cooking time 30 minutes
400 g tagliatelle pasta
300 g scampi, chopped and cleaned
0,5 dl olive oil
1 chopped yellow onion
1 clove of garlic, finely chopped
2 tbsp of nduja paste
2 tbsp tomato puree
1 pot of fresh basil, finely chopped
1-2 dl water
1 tsp salt
Parmesan cheese to serve.
Cook the pasta according to the instructions on the packet. Heat a capacious frying pan. Toast the scampi in the pan and set aside. Heat the pot. Add the olive oil, yellow onion, garlic, nduja and tomato paste to the pot. Sauté for a couple of minutes. Add the basil, water, salt and the roasted scampi. Bring to the boil, check the flavour and stir in the cooked pasta. Grate parmesan cheese on top if desired.
