Marinated garden berries with (fake) chocolate mousse

This fluffy chocolate mousse is easily made with just three ingredients. Garden berries marinated in mint syrup add freshness and summery flavour to the rich dessert.

Ingredients

1.5 dl sugar

1.5 dl water

3 sprigs of strongly flavoured mint

500 g garden berries

Instructions

Place the sugar, water and mint sprigs in a saucepan. Bring to the boil and simmer gently for approximately 5 minutes. Allow the syrup to cool slightly.

Gently fold the cleaned berries into the syrup and leave them to marinate for approximately 15 minutes.

To make the chocolate mousse, place all the ingredients in a bowl and whisk with an electric mixer until light and fluffy. Divide the mousse between individual serving dishes and refrigerate for 1–2 hours before serving.

Spoon the marinated berries over the mousse and garnish with fresh mint.
