Melt butter in a pan, add chocolate pieces, stir until smooth. Separate eggs. Stir yolks into cooled chocolate mixture. Whip whites with salt, add sugar gradually until stiff. Whip cream. Fold both into chocolate mixture. Divide mousse into serving dishes, chill.
Heat honey, lemon juice, and cardamom in a small pan. Remove from heat, stir in frozen berries, let marinate at least 1 hour.
Melt 50 g chocolate, dip half of each pretzel stick, place on parchment, sprinkle with freeze-dried berries. Chill.
Serve mousse topped with marinated berries and decorated with chocolate-dipped pretzels.
