Thyme-lemon marinated pears with blue cheese

A refreshing starter from Teresa Välimäki’s celebratory menu: pears marinated with lemon and thyme are paired with blue cheese and toasted nuts for a balanced and aromatic combination.

Ingredients

6 servings

 

  • 3 pears
  • 0.5 dl olive oil
  • 0.25 dl lemon juice
  • 0.5 tsp salt
  • Pinch of black pepper
  • 2 tsp grated lemon zest
  • 3 tbsp chopped fresh thyme
  • 75 g crumbled blue cheese
  • 50 g roasted pecans, chopped

 

Instructions

Cut pears into wedges, remove cores, and place in a bowl. Heat olive oil, lemon juice, salt, and pepper in a small saucepan to boiling. Remove from heat, stir in lemon zest and thyme. Pour hot marinade over pears. Marinate at least 2 hours, preferably overnight. Arrange pears on a platter, sprinkle with blue cheese and pecans.
