Roasted root vegetables with yogurt sauce

With this recipe you can make a healthy and delicious dip for a dinner party or a side dish for dinner.

Ingredients

  • 1 celery root
  • 3 beetroots
  • 3 carrots or 1 sweet potato

 

Vegetable Marinade:

  • 0.75 dl olive oil
  • 1 tsp red chili powder
  • 1 tsp black pepper
  • 1 tsp thyme
  • 1 tsp garlic powder or 2 garlic cloves
  • 1 tsp sesame seeds
  • 0,5 tsp salt

 

Yogurt Sauce:

  • 5 tbsp yogurt
  • 2 tbsp cream cheese
  • 1 tbsp lemon juice
  • 1 garlic clove, grated
  • Salt

Instructions

 

  1. Peel all the vegetables and cut them into strips.
  2. Mix the vegetable marinade ingredients thoroughly and toss with the vegetables. Mix well to coat.
  3. Roast the vegetables in the oven at 200°C for about 30 minutes, adjusting the time depending on whether you prefer them firmer or softer.
  4. Serve the roasted vegetables warm or cold.
  5. Combine all the sauce ingredients in a bowl and serve the yogurt sauce in a separate dish alongside the roasted vegetables.
